How is it almost the end of August? My birthday Friday really put into perspective how close to the end of summer we really are. Kids are back in school, hectic schedules are back in full-swing, and the grocery stores have Halloween candy out. What?!
Let’s soak up all the fresh produce while it lasts- especially cherries! Cherries have always been one of my favorite fruits. It could be because of their bright, vibrant color, but they’re also sweet and poppable! And they’re good for you. Winning.
With busier days ahead, these cherry chocolate chip muffins have you covered. They are super quick to make. Pitting and chopping the cherries will take longer than the muffins. Seriously. Guess who doesn’t have a cherry pitter? This girl. Maybe I should ask for one for Christmas. Or maybe I’ll continue rocking cherry red fingers. I think it works for me.
These cherry chocolate chip muffins call for basic ingredients that you probably already have. Minus the cherries. You may have those too. Once your cherries are chopped, you’ll mix your dry ingredients together, your wet ingredients together, and combine them. Fold in your cherries and chocolate chips and you’re done!
The only change I made to this recipe was to sprinkle a couple tablespoons of flour over my chopped cherries to prevent them from bleeding into my muffins. It may have been unnecessary, but I didn’t want pink muffins. I obviously made these with fresh cherries, but I think they could also be made with frozen cherries if you get a major craving for them in the middle of winter. The baking time would just need to be increased to account for the colder cherries. I may experiment with this soon. If anyone tries it, let me know!

- Preheat Oven to 350 degrees Farenheit.
2. In a medium bowl, 3Cups flour, 2 Teaspoons baking soda, and 1/4 Teaspoon salt. Set aside.
3. In a large bowl, mix together 1 Cup sugar, 1/2 Cup butter, 3 eggs, 1 Cup milk, and 1 Teaspoon vanilla extract.
4. Add flour to sugar mixture. Stir until combined. Add in 2 Cups chopped fresh cherries and 1 Cup chocolate chips.
5. Spray muffin tins with non-stick spray or line with cupcake liners.
6. Divide batter into 20 muffin tins (roughly 1/4 Cup batter in each) and bake until done (approximately 20-25 minutes)
*You can divide batter among 24 muffin tins if you like. Muffins will be smaller and baking time will be reduced by 5-10 minutes.
